Apple & Cinnamon Mother’s Day Cake

  • ⅓ cup coconut oil (melted) + extra for greasing

  • ¾ cup coconut sugar

  • 2 eggs (beaten)

  • 1 ½ cups plain flour

  • 2 teaspoons baking powder

  • ½ teaspoon baking soda

  • Pinch of salt

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla extract

  • ½ cup Vanilla Unsweetened Almond Breeze

  • 2 pink lady apples (thinly sliced)

Cinnamon topping:

  • 1 teaspoon cinnamon

  • 1 tablespoon coconut sugar

  • 1 teaspoon coconut oil (melted)


  1. Preheat oven to 180ºC and grease a square cake tin with coconut oil.

  2. Add coconut oil and coconut sugar to a large mixing bowl and stir until well combined.

  3. Add beaten eggs and mix well. Add in flour, baking powder, baking soda, salt, cinnamon, vanilla extract and almond milk and stir well until a smooth batter is formed.

  4. Pour ½ of the cake batter to your greased cake tin and top with ½ of the sliced apple.

  5. Top with the other half of the remaining batter and with the remaining apple slices.

  6. Sprinkle over cinnamon, coconut sugar and melted coconut oil to cover the apples.

  7. Place in oven and bake for 30-35 minutes, or until lightly golden brown and when a skewer is inserted it comes out clean! Enjoy!
