INGREDIENTS:
3 cups rolled oats
2 TBS coconut sugar
2 tsp baking powder
2 tsp cinnamon
¼ tsp salt
1 cup almond milk
2 eggs
½ cup unsweetened applesauce
2 tsp vanilla extract
1 cup peeled and diced apples
METHOD:
Preheat oven 180C and grease 12 hole muffin pan with cooking spray. Set aside.
In medium bowl, combine oats, sugar, baking powder, cinnamon and salt. Set aside.
In large bowl, whisk milk, eggs, applesauce & vanilla extract
Pour dry ingredients into wet ingredients and stir until thoroughly combined. Gently fold in diced apples
Spoon mixture into each muffin tin, filling almost to the top. Bake for 30-35 minutes or until cups are set and golden brown
Remove from oven and let cool for 20 minutes, remove to a wire rack and let them cool completely. Serve with a drizzle of honey or maple syrup or eat as is!
