Choc Pb Muffins

INGREDIENTS:

  • 2 bananas (ripe)

  • ¾ cup almond milk

  • 2 eggs

  • 2 tsp vanilla extract

  • ⅓ cup maple syrup

  • ½ cup peanut butter (smooth unsalted)

  • 2 cups rolled oats

  • 1 tsp baking soda

  • ¾ cacao powder

  • ½ tsp salt

  • ½ cup dark chocolate chips

METHOD:

  1. Preheat oven 170C fan forced. Grease muffin trays

  2. Throw all wet ingredients in a blender, then all the dry ingredients (exclude the dark choc chips). Now blend for 30 seconds or until smooth batter forms

  3. Add choc chips to blender batter by folding in by hand

  4. Pour batter into the muffin tin so that each is 3/4 full

  5. Sprinkle a few more chocolate chips on top then place them in oven for 18-20 min

  6. ⁣⁣Allow to cool 10-15 min then enjoy!

Place leftovers in airtight container up to 4 days.
