Strawberry Chia Protein Loaf

INGREDIENTS:

  • ¾ scoop protein powder

  • 2 tbsp coconut flour

  • 1 tbsp stevia

  • ½ tsp baking powder

  • ⅔ cups Almond Breeze Vanilla Almond Milk

  • 1 free range egg

  • 5 strawberries, chopped

  • 1 tbsp sugar free maple syrup

  • 1 tsp vanilla essence

  • 1 tbsp strawberry jam

  • 3-4 tbsp white chia seeds

  • Dedicated coconut, to top -

METHOD:

  1. Preheat oven to 170C and line a loaf tin with baking paper.

  2. In a large mixing bowl, all the dry ingredient and mix to combine.

  3. Add in the wet ingredients and mix again to combine. Depending on the route in powder used, you can either add more if the mixture is too wet or add more almond milk if the mixture it too dry.

  4. Add the mixture into the loaf tin and place in the oven to bake for around 40 mins or until golden and cooked through.

  5. Allow to cool down before cutting and serving.
