INGREDIENTS:
DRY:
1 ½ cups almond meal
¼ cup coconut flour
1 tsp baking powder
½ tbsp stevia
Pinch of salt
½ cup crushed walnuts, plus more for topping
WET:
3 eggs, whisked
2 shots coffee
¼ + 1 tbsp Almond Breeze Vanilla Almond Milk
1 tsp vanilla essence
¼ cup maple syrup
1 tbsp coconut oil, melted
METHOD:
Preheat the oven to 160C and line a loaf tin with baking paper.
In a large bowl, add all the dry ingredients, besides the walnuts, and mix to combine.
Add in the wet ingredient and mix well to combine until a cake batter like consistency forms. If it is too wet, add more almond meal, if it is too dry, add more almond milk.
Fold in the crushed walnuts.
Pour the batter into the loaf tin and spread evenly.
Add more crushed walnuts on top and place in the oven to bake for around 40 mins or until cooked.
Allow it to cool before cutting and serving!
TIP: serve with a smear of almond butter and maple syrup!
