Pistachio & Almond Choc Biscuit Sandwiches

INGREDIENTS: For the Biscuit:

  • 2 cups almond meal

  • 2 heaped tbsp earth cacao powder

  • 2 tbsp stevia powder

  • 2-3 tbsp sugar free maple syrup

  • ½ tap baking soda

  • ⅓ cup coconut oil, melted

  • 1 tbsp vanilla essence

  • ¼ cup Almond Breeze Chocolate Almond Milk

For the Filling:

  • 99th Monkey pistachio & almond butter


  1. Preheat oven to 170C and line a baking tray with baking paper.

  2. To make the biscuit, add dd all dry ingredients into a bowl and mix well.

  3. Add the wet ingredients and mix well until a dough forms. If the mixture is too dry, add in more almond milk.

  4. Form the dough into small balls and place on the baking tray.

  5. Using the back of a spoon, press down onto each ball until it is flattened and round (leave a bit of thickness to each cookie to make it ‘sandwich’ like).

  6. Place in the oven to make for around 10-15 mins or until golden.

  7. Allow the cookies to completely cool.

  8. Once cookies have cooled down, add a thick layer of pistachio and almond butter and top with another biscuit to make it into a sandwich.

  9. Repeat until all cookies have been used.

Serve and enjoy!
